The Edinburgh Gin Distillery was established in 2010. Distilled in the heart of Scotland’s capital city it captures this wonderful cities creativity and vibrance.
Launched in 2015, Seaside was the result of a collaboration with the team at the International Centre for Brewing & Distilling at Herriot Watt University in Edinburgh – bringing together the expertise of David Wilkinson their Head Distiller while helping nurture a new generation of gin innovators. The culmination of this project is an extraordinary gin that has a fresh sweetness on the nose, characterised by soft salinity and herbaceous, grassy notes on the palate, followed by a clean finish. The Edinburgh Seaside Gin encapsulates the wonder of the shoreline near Edinburgh. This softly sweet, mineralistic London Dry uses botanicals that were foraged on beaches around Edinburgh. Bladderwrack seaweed, scurvygrass and ground ivy make this gin reminiscent of a bracing walk on a Scottish beach. An inspired gin that stimulates the senses and transports you to the shoreline around Edinburgh. Perfect all year round, just like Scotland’s beaches.

As a graduate from the University’s Brewing & Distillation course this was a project that was close to my heart. The lightest gin in the London Dry range. A combination of grassy notes and minerality compliment the piney Italian juniper to make a remarkable, stand out gin. Tasting Notes
Nose: Fresh, lightly floral aromas on the nose.

Ingredients
- 25ml Seaside Gin
- 25ml Suze Liqueur
- 25ml Campari
- 3 dashes of grapefruit bitters
- Sea salt and rosemary to garnish
Method
1. Frost the rim of the glass with rock salt and rosemary
2. Fill the glass with ice before adding all the ingredients
3. Garnish with a sprig of rosemary
