Barrel Craft Spirits are based in Louisville, Kentucky and are an independent bottler and blender of unique aged, cask strength sourced whiskey and rum. Their goal is to select and blend products that explore different distillation methods, barrels and ageing environments, and bottle them at cask strength. Every batch is produced as a limited release and has an intentionally distinct flavour profile.
Dovetail is blended to highlight some of our favourite flavours. Woody bourbon; terroir driven Dunn Cabernet; toasted French oak; Late Bottled Vintage Port pipes; black strap molasses casks; all working in tandem to create a buttery and deep whiskey as unique as it is delicious.
Our Tasting Notes
Nose: Honey glazed apricots, toffee, sloe gin, blackberry jam, roasted chestnuts and new leather.
Palate: Milk chocolate, nutmeg, cinnamon, clove, golden syrup, and pink peppercorns.
Finish: Chestnuts and chocolate.
