As one of Scotland’s smallest distilleries Kilchoman can claim that they perform every stage of the production process on-site. Taking water from the nearby Allt Gleann Osamail burn (stream) they produce approximately 120,000 litres of spirit a year. The spirit is then placed inside ex-Bourbon barrels from Buffalo Trace distillery in Kentucky, and first fill Oloroso Sherry hogsheads and butts from Miguel Martin, Jerez, Spain. They often use wine seasoned barrels and rum seasoned barrels in smaller batch releases. When Kilchoman was constructed it was the first new distillery on Islay in over 120 years. Not only a milestone for Islay but for the Scotch Malt Whisky Industry.
Kilchoman’s 100% Islay range is the world’s only single farm Single Malt Scotch whisky. Every stage in the creation of this peaty scotch whisky is completed at Kilchoman, Islay’s farm distillery. From growing the barley to bottling the whisky it is 100% Islay. Using barley crops from local farms in 2007, 2009 and 2011 giving the distillery full control in its production.
The 11th Edition is a vatting of 26 ex-Bourbon barrels and 7 Oloroso sherry butts matured for no less than 9 years in onsite dunnage warehouses. Limited to 12,000 bottles worldwide.
Our Tasting Notes
Nose: Ripe plums and firm figs, floral and fresh with earthy peat and old cigar box scent.
Palate: Nectarines and peaches, freshly cut hay, Manuka honey, nutmeg, cinnamon and stemmed ginger.
Finish: Salted dark caramel, sticky date pudding and crushed nuts.
